What Fermentation Actually Does to Gluten
Gluten is a network built from two protein families: glutenin, which provides elasticity, and gliadin, which provides extensibility. During a long ferment, protease enzymes — some endogenous to the flour, some contributed by the lactic acid bacteria and wild yeasts in the culture — cleave peptide bonds in those proteins.

So a long-fermented sourdough loaf genuinely contains less intact gluten protein than a two-hour commercial yeast loaf made from the same flour.

The Threshold Is the Whole Story
In the United States, and under the Codex Alimentarius standard used internationally, a product may be labeled gluten-free if it contains less than 20 parts per million of gluten. That threshold exists because it reflects a level at which most people with celiac disease do not sustain measurable intestinal damage.
Twenty parts per million is a very small number. Wheat flour is roughly 8–14% protein by weight, and a large share of that is gluten. Getting from there to under 20 ppm is not a modest reduction — it requires eliminating essentially all of it.
Ordinary sourdough fermentation reduces gluten by some fraction. It does not approach that threshold, and the amount it does achieve varies with the starter’s microbial population, fermentation time, temperature, hydration, and flour. Using specially selected lactic acid bacteria, sometimes combined with fungal proteases, fermenting for extended periods under controlled laboratory conditions, they have produced wheat products with dramatically reduced gluten, in some cases below the 20 ppm threshold, and have run small pilot trials in celiac patients.
Two things about that work matter here.
First, it is a demonstration that the biochemistry can be driven that far under engineered conditions. That is genuinely interesting science.
Second, it has essentially nothing to do with the loaf on your counter. Those protocols use specific selected strains rather than whatever wild population your starter carries, controlled conditions rather than a kitchen, and laboratory verification rather than hope. The researchers themselves frame this as a potential route to novel products, not as a green light for ordinary sourdough.
When a blog post says “studies show sourdough breaks down gluten,” this is usually the research being gestured at. The citation is real. The conclusion drawn from it is not.
Why Some People Genuinely Feel Better on Sourdough
Here is the part that keeps the myth alive: plenty of people without celiac disease report that long-fermented sourdough sits better with them than standard commercial bread. Those reports are not imaginary, and dismissing them is as unhelpful as overselling them.
For many, the explanation may not be gluten at all. Biesiekierski et al.’s 2013 crossover trial in Gastroenterology took self-identified gluten-sensitive patients, stabilized them on a low-FODMAP background diet, and then challenged them with gluten under blinded conditions. Once that low-FODMAP background was in place, gluten produced no reproducible, dose-dependent symptom effect.
It is worth being precise about what that does and does not show. The trial establishes that gluten was not a reproducible trigger in those patients under a controlled low-FODMAP background. It did not directly challenge fructans and did not prove that fructans caused the symptoms — that reading is an inference the study’s design cannot carry on its own. What it does undercut is the assumption that gluten must be the culprit whenever bread causes trouble.
Fermentation can reduce fructans as well as degrade gluten, so it is plausible that someone whose symptoms are carbohydrate-driven tolerates a long-fermented loaf better while their gluten exposure is essentially unchanged. Plausible is the right word; how much any given loaf’s fructan content actually falls depends on grain, strain, temperature, and process. This distinction is the reason the “sourdough is easier to digest” experience does not generalize to celiac disease. Celiac disease is an autoimmune response to gluten itself, not a digestive comfort issue, and it produces intestinal damage whether or not the person feels anything.
The Line for Bakers
If you bake for other people, this comes down to a few clear positions.
For a guest with celiac disease: no sourdough you bake from wheat, rye, or barley is appropriate, at any fermentation length. Baking them a gluten-free loaf instead is a separate question, and it comes down to controls: dedicated or thoroughly cleaned equipment, separate flour storage, cleaned surfaces, and no wheat flour being handled in the air around that bake. Those controls are achievable in a home kitchen, but they have to be genuinely met rather than assumed — flour dust settles for hours and porous equipment retains residue.
